OAT, CHIA & FLAX LOAF
Description
Homemade bread is a labor of love, crafted with basic ingredients like flour, water, yeast, and salt, mixed and kneaded by hand to create a dough that rises and bakes into a warm, comforting loaf that fills the kitchen with a tantalizing aroma, evoking memories of tradition, warmth, and the simple pleasures of life. Of Course this loaf isn't much different but I did kick it up a notch by incorporating fiber rich ingredients such as chia, flax seed and bran to ensure that this loaf is both delicious and nutritiousÂ
Ingredients
Instructions
-
In a large mixing bowl, combine the flour, oats, flax seeds, chia seeds, salt, sugar, and yeast. Stir until evenly mixed. Slowly add the warm water and olive oil, bringing the dough together into a shaggy, slightly sticky ball. Transfer it to a floured surface and knead for 5–7 minutes until smooth and elastic, dusting lightly with flour as needed.
-
Place the dough into a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm, draft-free place for 45 minutes to 1 hour, or until doubled in size. Punch down the dough to release excess air, then roll it into a log shape and transfer it to a greased loaf pan. Cover again and allow to rest for 20 minutes while the oven preheats to 375°F.
-
Before baking, brush the top with a little water and sprinkle with extra oats, flax, and chia seeds for a rustic finish. Bake for 30–40 minutes, until the top is golden brown and the bread sounds hollow when tapped on the bottom. Remove from the oven, release from the pan, and cool on a wire rack for at least 5–10 minutes before slicing.
Note
For the best texture, ensure your water is warm but not hot—too much heat can kill the yeast.
If using active dry yeast, dissolve it in warm water with a pinch of sugar first.
Dough should feel soft and slightly tacky, not overly sticky; adjust with flour or water if needed.
Allow bread to cool before slicing to avoid a gummy texture (though sneaking a warm slice is always tempting!).
Store in an airtight bag at room temperature for up to 3 days, or freeze sliced for up to 2 months.
Try adding herbs like rosemary or thyme for a savory twist.
