This Thyme & Butter Roasted Chicken is the kind of recipe that brings everyone into the kitchen before dinner is even ready. The smell of garlic butter, dried thyme, and roasting chicken filling the house is pure comfort, especially when it’s paired with the familiar Sunday lunch feeling we love. Using the spatchcock method helps the chicken cook evenly while giving you beautifully crisp skin and juicy, flavorful meat from edge to center.
What makes this roasted chicken special is the dry brine. Instead of rushing straight to the oven, the chicken is seasoned generously with salt, black pepper, and thyme, then rested in the fridge for hours so the flavor penetrates deeply. This creates better seasoning throughout the meat, not just on the surface. The final garlic rosemary butter baste adds richness, aroma, and that glossy golden finish that makes roast chicken irresistible.
This recipe is perfect for family meals, weekly meal prep, or holiday-style spreads where you want something simple but impressive. It pairs beautifully with roasted vegetables, rice dishes, mashed potatoes, or fresh salads. The contrast of crispy skin, tender juicy meat, and buttery herb flavor makes this Thyme & Butter Roasted Chicken a reliable comfort-food favorite you’ll keep making again and again.
INGREDIENT DETAILS
Whole Chicken (2 x 2–2.5 lb, spatchcocked)
The star of the dish, spatchcocking helps the chicken cook faster and more evenly while allowing the skin to crisp beautifully.
Salt (5 tsp)
Essential for the dry brine, salt deeply seasons the chicken and helps improve moisture retention for juicy meat.
Black Pepper (2 tsp)
Adds warmth and mild spice while balancing the richness of the butter and roasted chicken flavor.
Dried Thyme (2 tsp)
Brings earthy herbal flavor and classic Caribbean-style seasoning that pairs perfectly with roast chicken.
Unsalted Butter (6 tbsp)
Creates richness and helps the skin brown beautifully while carrying the garlic and rosemary flavors during basting.
Fresh Rosemary (2 tsp, chopped)
Adds aromatic depth and fresh herb flavor that complements the thyme and roasted chicken beautifully.
Garlic (1–2 cloves)
Provides bold savory flavor and fragrance that infuses the melted butter and enhances the final roast.
Lemon or Vinegar Water (for cleaning)
Used during prep to clean the chicken before seasoning, a common step in Caribbean kitchens.

For Roasting
Instructions
-
Clean and wash the chicken using lemon water or vinegar water, then remove and pat completely dry with paper towels. Dry skin helps the chicken roast properly and develop crisp golden skin.
-
In a small bowl, mix together the salt, black pepper, and dried thyme. Divide the seasoning mixture in half so it can be distributed evenly across both chickens.
-
Place the chickens on a wire rack set over a baking tray. Sprinkle the dry brine generously over both sides of the chicken, including underneath and inside the cavity area, rubbing the seasoning in well. Arrange them skin-side up and place in the refrigerator uncovered for at least 4 hours, ideally 12 hours, or up to 24 hours for deeper flavor.
-
When ready to cook, preheat the oven to 400°F.
-
Transfer the chickens to a roasting pan with a wire rack and roast for 45 minutes. During this time, the skin should begin to turn golden and the fat will start rendering beautifully.
-
While the chicken roasts, melt the butter in a small saucepan over low heat. Add the grated garlic and chopped rosemary, allowing it to gently infuse for about 2 minutes without browning.
-
After the first 45 minutes of roasting, remove the chicken from the oven and baste generously using both the pan drippings and the garlic rosemary butter. Return the chicken to the oven and roast for another 15 minutes, or until the skin is deeply golden and the internal temperature reaches safe doneness.
-
Remove from the oven and allow the chicken to rest for 10–15 minutes before carving. This helps the juices settle and keeps the meat moist and tender when sliced.
-
Serve hot with your favorite sides like roasted vegetables, rice, mashed potatoes, or a fresh salad.
Note
Patting the chicken very dry before seasoning is one of the most important steps for achieving crispy skin.
Leaving the chicken uncovered in the fridge during the dry brine helps dry the skin surface while seasoning the meat more deeply.
If using salted butter instead of unsalted, reduce the dry brine salt slightly to avoid over-seasoning.
For extra browning, you can broil the chicken for 2–3 minutes at the end, but watch carefully to prevent burning.
This recipe works beautifully with whole chicken pieces if you prefer not to spatchcock.
Storage
Store leftover roasted chicken in an airtight container in the refrigerator for up to 4 days. Keep sliced meat separate from the bones for easier reheating and meal prep.
Reheat gently in the oven at 325°F covered with foil, or in the microwave with a small splash of broth to prevent drying out.
For freezing, allow the chicken to cool completely before wrapping tightly or storing in freezer-safe containers. Freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
The leftover chicken is excellent for sandwiches, wraps, soups, pasta dishes, rice bowls, or quick weekday lunches.
