Rice has a way of taking on the personality of whatever you cook it with, and that’s exactly what happens in this Squash & Thyme Basmati Rice. Grated squash melts gently into the grains as it cooks, adding a soft golden color and just enough natural sweetness without overpowering the dish. It’s a small addition that completely changes the character of an everyday pot of rice.
Fresh thyme plays an equally important role. Rather than cooking for a long time, it’s stirred in at the end so its aroma stays bright and fresh. Combined with sautéed onion, garlic, pimento peppers, and a touch of hot pepper, the result is a rice dish that’s layered with flavour but still light enough to pair with almost anything.
One of the things I enjoy most about this recipe is that nothing competes for attention. Every ingredient has a purpose, from the buttery texture the squash creates to the gentle herbal finish from the thyme. Whether served alongside roasted meats, grilled fish, stewed vegetables, or enjoyed on its own, it’s a simple reminder that a few fresh ingredients can completely transform a familiar staple.
INGREDIENT DETAILS
Cooked Basmati Rice (4–5 cups)
The fluffy, separate grains of basmati rice provide the perfect base, allowing the vegetables and herbs to coat every grain without becoming heavy or sticky.
Fresh Thyme (1 tsp)
Added at the end of cooking, fresh thyme contributes a delicate herbal aroma and bright finish.
Black Pepper (¼ tsp)
Adds gentle warmth and balances the sweetness of the squash.
Grated Squash (1½ cups)
As it cooks, the squash softens into the rice, adding moisture, natural sweetness, and a subtle golden hue.
Medium Onion (½)
Provides sweetness and depth once sautéed.
Garlic (2–3 cloves, minced)
Adds savoury richness and fragrance that forms the flavour base of the dish.
Pimento Peppers (3, chopped)
Contribute a mild pepper flavour and freshness without adding heat.
Olive Oil (3 tbsp)
Helps sauté the aromatics and evenly coats the rice.
Hot Pepper (to taste)

Squash & Thyme Basmati Rice
Description
This Squash & Thyme Basmati Rice is a simple way to give plain rice more color, flavor, and texture. As the squash softens into the rice, it adds subtle sweetness while fresh thyme and garlic keep every bite fragrant and savory.
Ingredients
Instructions
-
Heat the olive oil in a medium to large frying pan over low heat. Add the onion, garlic, pimento peppers, and hot pepper, then sauté for 30–40 seconds until fragrant, being careful not to let the garlic brown.
-
Stir in the grated squash and continue cooking over low heat for 5–6 minutes, stirring occasionally. The squash should soften and release some of its moisture while remaining vibrant in colour.
-
Add the cooked basmati rice, season with the salt and black pepper, and gently fold everything together until the squash and aromatics are evenly distributed throughout the rice. Remove the pan from the heat, stir in the fresh thyme, and serve while warm.
Note
Grating the squash on the large holes of a box grater gives the best texture, allowing it to soften quickly without disappearing completely.
Day-old rice works especially well because the grains stay separate during mixing.
If the rice has been refrigerated, break up any clumps before adding it to the pan for even heating.
Leftovers can be refrigerated in an airtight container for up to three days and reheated gently on the stovetop or in the microwave with a splash of water if needed.
