Instructions
-
Preheat the oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper or greasing and lightly dusting it with flour. In a small bowl, combine the cinnamon, nutmeg, and ground cloves and set aside.
-
Place the ripe bananas into a small to medium mixing bowl and mash thoroughly using the back of a fork until mostly smooth. Add the brown sugar and cooled melted butter, then mix well until fully combined.
-
Add the flour, wheat bran, baking powder, baking soda, salt, and prepared spice mixture to the bowl. Pour in the milk gradually while gently mixing until a thick batter forms. Stir in the vanilla extract and continue mixing just until everything is incorporated. Avoid overmixing to keep the loaf tender.
-
Transfer the batter to the prepared loaf pan and spread it evenly. Sprinkle the top generously with rolled oats.
-
Bake for 45–50 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean. The top should feel set and spring back lightly when touched.
-
Remove the loaf from the oven and allow it to rest in the pan for 5–8 minutes. Carefully remove it from the pan and transfer it to a wire rack to cool further. Serve slightly warm or completely cooled.
Note
- The riper the bananas, the sweeter and more flavorful the loaf will be.
- If your bananas are very large, use three; if medium-sized, use four.
- Do not overmix the batter, as this can create a dense loaf.
- Add chopped walnuts, pecans, raisins, or chocolate chips for extra texture and flavor.
- Store at room temperature in an airtight container for up to 3 days.
- Refrigerate for up to 1 week.
- Individual slices can be wrapped and frozen for up to 3 months.
- Warm slices briefly before serving for the best texture and flavor.
