MANGO JAM (RED MANGO) with BEET POWDER

Servings: 4 Total Time: 55 mins Difficulty: Intermediate
Trinbagonian-style mango jam naturally colored with beet powder for a vibrant, wholesome twist.

Mango Jam, or Red Mango, is a traditional Trinbagonian snack, a sweet and delicious treat that has been a part of many childhoods, mine included. Making this treat with my homemade beet powder gives one of my favorite snacks a healthier twist. In Trinidad and Tobago, mango jam is more than just a preserve, it’s a sweet, sticky indulgence always recognized by its signature ruby-red color. Traditionally, that vibrant hue comes from bottled red food coloring, but with some dyes now deemed harmful, this recipe offers a natural alternative.

By swapping in beet powder, the jam keeps its bold, authentic color while remaining safe, wholesome, and just as delicious. The flavor is unchanged: half-ripe mangoes simmered with warm spices like cinnamon, cloves, and bay leaf, with a gentle touch of pepper for balance, or a heartier amount if you love a real kick of spice. What’s different is the peace of mind: no synthetic dyes, just a simple, plant-based powder that enhances the jam’s natural beauty without altering its taste.

The result is a red mango jam that feels true to tradition yet slightly modernized, celebrating Caribbean heritage while choosing a safer path forward. It’s proof that our beloved snacks can be both nostalgic and nourishing, a sweet reminder that small swaps can preserve both flavor and health

INGREDIENT DETAILS

Mangoes (2 large, chopped into 7–8 pieces each)
The star ingredient—tropical, sweet, and tangy. Provides body and flavor to the jam.

Sugar (1 ¾ cups, adjust to taste)
Balances the tartness of mangoes and helps the jam set.

Salt (½ tsp)
Enhances sweetness and brings out the fruity depth.

Cinnamon Stick (1)
Adds warm, earthy spice notes that pair beautifully with mango.

Bay Leaves (2)
Infuses subtle herbal depth for a more complex flavor.

Clove Buds (½ tsp whole or ¼ tsp ground)
Brings aromatic warmth and slight sharpness.

Pepper (1 piece, to taste)
Adds mild heat to balance the sweetness.

Beet Powder (4–5 tsp, adjust to desired color)
Natural food coloring that creates a vivid red hue without altering taste.

Water (enough to cover mangoes in pot)
Helps simmer and soften the mangoes into jam consistency.

Description

This bright, spiced mango jam uses beet powder as a natural food coloring alternative, creating a deep jewel-red finish without artificial dyes.

Ingredients

Instructions

  1. Place the chopped mangoes in a large saucepan and cover with water. Add the sugar, salt, cinnamon stick, bay leaves, cloves, and pepper. Stir well to combine.
  2. Bring the mixture to a simmer over medium heat. Cook for about 30 minutes, stirring occasionally, until the mango skin has softened, the flesh is fork-tender, and about two-thirds of the liquid has reduced.
  3. At this stage, stir in the beet powder gradually until you reach your desired deep red color. Continue cooking on low heat for another 15 minutes, stirring frequently, until most of the liquid has evaporated. The mango should begin to break down, and the mixture will thicken into a jammy consistency. Taste and adjust sweetness if needed.
  4. Remove from heat and allow to cool. Once cooled, transfer into sterilized glass jars. Serve your jewel-toned mango jam on bread, pastries, or as a sweet condiment alongside savory Caribbean dishes.

Note

Beet Powder Prep: You can make beet powder at home by dehydrating beets and grinding them to a fine powder. Store in an airtight jar.

Storage: Keeps in sterilized jars in the fridge for up to 3 weeks. For longer storage, use proper canning methods.

Spice Control: Omit pepper for a purely sweet jam or add more for a spicy kick.

Serving Ideas: Enjoy simply as a snack.
