Curry goat is more than a meal, it’s a celebration of Caribbean flavor, heritage, and tradition. This dish carries the bold aroma of toasted curry, fresh green seasoning, and fiery hot pepper, intricately cooked to bring that signature heat straight to your kitchen. It echoes the familiar scents of weekend river limes, family gatherings, and festive feasts. Goat meat, with its lean, gamey richness, takes beautifully to slow cooking—soaking up layers of masala, geera, and coconut milk until it’s fall-off-the-bone tender. Its deep golden hue, glossy finish, and thick, spicy gravy are unmistakable on any Caribbean plate, especially when paired with buss-up-shut, rice, or ground provisions. Whether served for Sunday lunch or a special occasion, this curry goat is pure comfort, culture, and unforgettable flavor.

To Cook:
Instructions
-
Wash and clean goat, removing excess fat. Season with green seasoning, salt, and black pepper. Let marinate for at least 30 minutes or overnight.
-
Heat oil in a heavy pot over medium-high heat. Add curry powder, geera, and masala and toast for 30 seconds to 1 minute until fragrant.
-
Add two-thirds of the aromatics—onion, garlic, pimento, and shadon beni. Stir well and let cook for 1–2 minutes.
-
Add seasoned goat and stir to coat in the curry base. Rinse the marinating bowl with ½ cup water and pour that into the pot. Add the whole hot pepper, cover, and let cook for 15 minutes.
-
After 15 minutes, add coconut milk and enough water (approx. 2 cups) to just cover the meat. Reduce heat to medium-low, cover, and simmer for 1 hour 30 minutes, checking every 20–30 minutes to stir and add water (½ cup at a time) as needed to prevent sticking.
-
In the final 30 minutes, reduce water additions to allow the curry to thicken naturally.
-
Once goat is tender, uncover, add the remaining aromatics, and adjust salt to taste and simmer uncovered for 10-15 mins to thicken gravy. Turn off the heat and serve hot.
