This Creamy Red Lentil Dhal (Trini Style) is one of the most comforting and satisfying dishes in Caribbean home cooking. Made with tender red lentils or massor dal, fresh herbs, garlic, and warm spices, this dhal cooks down into a smooth, hearty pot of flavor that pairs beautifully with rice or roti.
What makes this dhal special is its balance of simplicity and depth. Red lentils naturally break down as they cook, creating a creamy texture without the need for heavy ingredients. Onion, garlic, and fresh chadon beni bring bright, herbal flavor, while turmeric gives the dhal its signature golden color and warm earthy taste.
A defining feature of traditional Trini dhal is the chunkay, a final tempering of hot oil infused with garlic, cumin seeds, and spices. When poured into the cooked lentils, the sizzling oil releases an incredible aroma and instantly deepens the flavor of the dish. This simple finishing step transforms the dhal into something rich, fragrant, and incredibly satisfying.
This Caribbean red lentil dhal is also wonderfully budget-friendly and nourishing. Lentils are packed with plant-based protein and fiber, making this dish perfect for meatless meals, weekly meal prep, or comforting weeknight dinners. Serve it alongside fluffy rice, buss-up-shut roti, or even enjoy it on its own as a warming bowl of goodness.

Instructions
-
Rinse the red lentils thoroughly under cool water until the water runs mostly clear.
-
Place the lentils, diced onion, chopped chadon beni, two cloves of garlic, turmeric, and 3–4 cups of water into a medium saucepan. Bring the mixture to a gentle boil, then cook till softened for 10–12 minutes, stirring occasionally, until the lentils soften and begin to break down.
-
Once the lentils are fully cooked, remove the pot from the heat or lower heat to lowest setting and let simmer gently . At this stage the dhal should already have a naturally creamy texture. Using a spoon, swizzle stick (dhal gutney), whisk, or emulsion blender gently break down the lentils further until the mixture becomes smooth and thick.
-
Return the pot to the stove over low heat and add the remaining 1 cup of water to adjust the consistency. If the dhal feels too thick, add a little more water until it reaches a creamy, pourable texture.
-
To prepare the chunkay, heat the oil in a small saucepan or metal cup until very hot. Carefully add the remaining two cloves of crushed garlic, hot pepper, cumin powder, and cumin seeds. Allow the garlic to cook for a few seconds until it turns dark brown or burn until lightly blackened and fragrant.
-
Immediately pour the hot seasoned oil into the pot of dhal. The oil will sizzle as it hits the lentils, releasing a rich aroma.
-
Stir the chunkay into the dhal and season with salt to taste.
-
Serve the dhal hot, alongside rice, roti, or your favorite sides.
Note
- Red lentils cook quickly and naturally become creamy, so they do not require soaking beforehand.
- If you prefer a smoother dhal, blend briefly with an immersion blender after adding the chunkay.
- Adjust the heat level by adding more or less hot pepper.
- For extra flavor, add a small piece of scotch bonnet pepper while the lentils cook.
- Store leftover dhal in the refrigerator for 3–4 days and reheat gently with a splash of water.
- Dhal also freezes well for up to 2 months.
