Instructions
-
Add rinsed rice to a skillet and cover with water. Bring to a boil and cook according to package instructions until the grains are tender and slightly al dente. Drain and set aside.
-
In the same skillet, heat olive oil over medium-high heat. Add diced onions and sauté until translucent and fragrant. Stir in garlic and cook briefly until just golden.
-
Add the minced beef along with most of the taco seasoning. Cook, breaking up the meat, until it's browned about 90% through. Add black beans, corn, and green peas. Stir well, then pour in 1 cup of water. Cover and simmer on medium-low for 10–12 minutes until the peas are tender and most of the liquid has absorbed.
-
Return the cooked rice to the skillet. Gently fold the mixture together using a light hand or small spoon. Taste and adjust salt. Turn off heat, cover, and let the dish rest for a few minutes to absorb any remaining moisture.
-
Meanwhile, combine mayonnaise, water, sugar, reserved taco seasoning, and a pinch of salt in a small bowl or jar. Stir until smooth. Chill or use immediately.
-
To serve, plate the skillet rice and drizzle with dressing. Top with fresh diced tomatoes, lime wedges, and optional fried plantains for a complete, flavor-packed meal.
Note
Red jasmine rice adds a great pop of color, but any rice works, just adjust the cook time and water.
Letting the skillet rest covered after combining helps lock in moisture and flavor.
The mayo dressing can be made ahead and stored in the fridge for 3–4 days.
Spice levels can be adjusted by swapping seasoning blends or adding chili flakes.
