Sausage and Spinach Egg Bake

Servings: 4 Total Time: 35 mins Difficulty: Beginner
A tender baked egg dish layered with sage and apple sausage, spinach, sweet peppers, and melted cheese, easy to assemble and ready for the oven.

Sausage and Spinach Egg Bake is the kind of dish that earns a permanent spot in the breakfast rotation because it does most of the work before the oven is even on. Eggs get whisked with milk and a simple seasoning blend, then poured over cooked sage and apple sausage, spinach, diced red peppers, and onions in a baking dish. A final layer of cheese goes on top, and the whole thing bakes until the centre is set. It slices cleanly, reheats well, and works just as nicely for a slow weekend morning as it does for a batch of weekday breakfasts.

The layering is worth paying attention to. The sausage, peppers, onions, and spinach go into the dish first, spread out evenly so every slice gets a bit of everything. The egg mixture goes over the top, and because the ingredients underneath are already distributed, the eggs settle around them rather than pooling in one spot. This is a small detail, but it makes a real difference to how evenly the bake cooks and how each portion turns out.

Frozen spinach needs a little care before it goes anywhere near this dish. It holds a surprising amount of water, and if it goes in still frozen or simply thawed but wet, that water ends up in the egg mixture and stops the bake from setting properly. Thaw it fully and squeeze it dry in a clean towel or with your hands before adding it. The same goes for the sausage: it should be cooked and cooled before it goes into the dish, since hot sausage added to raw eggs will start cooking them before the bake even begins.

The seasoning here is deliberately restrained. Onion powder, garlic powder, black pepper, and pepper flakes add savoury depth and a gentle warmth without overwhelming the sausage, which is already bringing its own sage and apple flavour. Salt needs a light hand too, since the sausage and cheese both carry salt. Start with 1/2 tsp, taste the egg mixture before it goes in the oven if you like, and adjust at the table. The cheese topping browns slightly as the bake finishes, and a scatter of fresh parsley at the end adds a little colour and freshness. Serve it with toast, fruit, or a simple salad, depending on the time of day.

INGREDIENT DETAILS

Eggs (6): The base of the bake. They set into a tender, sliceable custard and hold the sausage, vegetables, and cheese together.

Cooked Sage and Apple Sausage (3/4 cup): Brings the main savoury note, with sage adding an earthy aroma and apple a mild sweetness. It should be cooked and cooled before it goes into the dish so it does not start cooking the raw eggs.

Frozen Spinach (1/2 cup): Adds a mild, earthy green note and a little texture. It must be thawed and squeezed dry, since excess water will stop the bake from setting properly.

Shredded Cheese (1/2 cup, plus 1/4 cup for topping): Melts into the egg mixture and gives the bake a richer, savoury flavour. The extra cheese on top browns slightly as it bakes.

Diced Red Peppers (1/4 cup): Add a mild sweetness and a pop of colour. They soften in the oven without losing all their texture.

Milk (1/4 cup): Thins the eggs slightly so the bake sets into a softer, more tender custard rather than a firm, rubbery one.

Diced Onions (2 tsp): Add a savoury bite that supports the sausage and cheese. Diced fine so they soften fully in the oven.

Onion Powder (1 tsp): Reinforces the fresh onion with a rounder, more mellow savoury note that seasons the eggs evenly.

Garlic Powder (1/2 tsp): Adds a warm, savoury depth that lifts the egg mixture without overpowering the sausage.

Black Pepper (1/4 tsp): A sharp, warming bite that balances the richness of the eggs and cheese.

Pepper Flakes (1 tsp): A gentle, scattered heat that builds slowly and cuts through the richness of the sausage and cheese.

Salt (1/2 tsp): Seasons the egg mixture lightly. The sausage and cheese already carry salt, so adjust at the table if needed.

Shredded Cheese for Topping (1/4 cup): Forms a golden, slightly browned top that contrasts with the soft bake underneath.

Fresh Chopped Parsley (1 tsp): A fresh, grassy finish scattered over the top just before serving.

Difficulty: Beginner Prep Time 10 mins Cook Time 25 mins Total Time 35 mins
Servings: 4

Description

Eggs whisked with milk, onion powder, garlic powder, and pepper flakes, poured over cooked sage and apple sausage, spinach, red peppers, and onions, then baked with a cheese topping until set.

For the Bake

For the Topping

Instructions

  1. Preheat the oven to 350F (175C).
  2. Line an 8x8 or 9x9 inch baking dish with parchment paper.
  3. Thaw the frozen spinach and squeeze it dry with your hands or a clean towel. Crumble the cooked sausage if it is not already crumbled.
  4. In a bowl, whisk the eggs with the salt, garlic powder, onion powder, pepper flakes, black pepper, milk, and 1/2 cup of shredded cheese until well combined.
  5. Spread the sausage, diced peppers, onions, and spinach evenly across the bottom of the prepared baking dish.
  6. Pour the egg mixture over the top, making sure the ingredients are evenly covered.
  7. Sprinkle the remaining 1/4 cup of shredded cheese over the top.
  8. Bake for 20 to 25 minutes, until the centre is set and no longer jiggles when you gently shake the dish.
  9. Remove from the oven and let cool for a few minutes. Scatter the fresh parsley over the top, then slice and serve with your choice of breakfast sides.

Note

Frozen spinach must be thawed and squeezed dry before it goes into the dish. Extra water will stop the bake from setting properly.

Cook and cool the sausage before adding it to the dish. Hot sausage will start cooking the raw eggs.

Start with 1/2 tsp salt and adjust at the table, since the sausage and cheese both carry salt.

If the centre still jiggles after 35 minutes, return the dish to the oven and check every 5 minutes. Oven temperatures vary, and a slightly larger dish will need a little longer.

Let the bake cool for a few minutes before slicing so it holds together cleanly.

Leftovers keep in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.

The bake freezes well for up to 2 months. Thaw overnight in the refrigerator before reheating.
