Description

Sweet potatoes should be a welcome part of any diet, as far as I am concerned. Not only do they taste amazing, but there are also many great ways to spruce them up and incorporate them into your meals. Let's not forget that they pack a nutritional punch that will leave you wondering how something so delicious can also be so good for you.

Ingredients

Instructions

  1. 1. Bring a medium to large saucepan to a boil, salt water generously, and add sweet potatoes. Cook for 15-20 mins or until potatoes are soft. Drain and set aside. Let cool slightly before cutting potatoes into cubes.
  2. 2. In a medium-large sized oven-safe cast iron skillet or frying pan on medium heat, add olive oil.
  3. 3. Add onions and sauté for 1-2 mins until they begin to brown slightly, then add garlic and sauté for 30 secs.
  4. 4. Add potatoes to the skillet along with 1 1/2 cups cheese, milk, paprika, black pepper, and salt.
  5. 5. Mix potatoes well, slightly crushing them as you go, but ensure they remain lumpy.
  6. 6. Once potatoes and cheese are mixed well, spread evenly and top with the remaining cheese. Place into the oven on the broil setting for 10-15 mins until golden brown.
  7. 7. Garnish with parsley and serve.

Note

*Cook's Notes:
1. **Customization**: Feel free to customize this recipe by adding other vegetables like bell peppers, spinach, or broccoli for added flavor and nutrition.

2. **Cheese Variations**: Experiment with different types of cheese to change the flavor profile of the dish. Try sharp cheddar for a more robust flavor or mozzarella for a stretchy, gooey texture.

3. **Texture**: Be mindful not to over-mix the potatoes to maintain some lumps for a rustic texture in the final dish.

4. **Garnish**: The parsley garnish adds a fresh touch to the dish, but you can also try topping with chopped green onions, fresh herbs, or a drizzle of sour cream.

Storage Information:
**Refrigeration**: Store any leftover Sweet Potato and Cheese dish in an airtight container in the refrigerator for up to 3-4 days.

- **Reheating**: Reheat individual servings in the microwave or in a preheated oven at 350°F (180°C) until warmed through.

**Freezing**: You can freeze the cooked Sweet Potato and Cheese casserole for up to 2-3 months. Thaw overnight in the refrigerator before reheating.

- **Make Ahead**: You can prepare the dish up to the point of baking, cover and refrigerate, then bake it when ready to serve.

- **Note on Texture**: The texture of the dish may change slightly upon reheating; the cheese may become less gooey, but the flavors will still be delicious.
