Servings: 4 Total Time: 10 mins Difficulty: Beginner
A fresh, crisp, and vibrant salad with juicy tomatoes, cucumber, red onion, and a simple homemade herb dressing.

This Greek Style Salad is the kind of simple, colorful dish that instantly brightens any meal. Made with juicy tomatoes, crisp cucumber, thinly sliced red onion, and finished with a quick homemade olive oil dressing, it delivers freshness in every bite. Optional feta and olives add that classic salty Mediterranean finish, while the honey and red wine vinegar dressing keeps everything balanced with a light sweet-tangy touch.

What makes this salad special is how effortless it is while still feeling full of flavor. The tomatoes bring sweetness and juiciness, the cucumber adds cool crunch, and the red onion gives just enough sharpness to keep things lively. Combined with garlic, oregano, and olive oil, the dressing ties everything together into something that feels both refreshing and satisfying without being heavy.

While inspired by traditional Greek flavors, this salad fits beautifully into Caribbean kitchens where fresh salads are often paired with grilled meats, baked fish, roast chicken, or Sunday lunch spreads. It is budget-friendly, quick to prepare, and ideal for meal prep, brunch tables, or warm-weather dinners. Whether served chilled or fresh from the bowl, this Greek Style Salad is a reliable go-to for clean, bright flavor and easy everyday cooking.

Tomatoes
Tomatoes bring sweetness, juiciness, and vibrant color to the salad. They create the fresh base and help carry the dressing beautifully.

Cucumber
Cucumber adds cool crispness and refreshing crunch that balances the softer tomatoes and sharp onion.

Red Onion
Red onion provides sharpness and light bite while adding color and depth. Thin slicing helps it blend smoothly into the salad.

Feta Cheese (Optional)
Feta adds creamy saltiness and richness that gives the salad its classic Greek-style finish. It also contrasts beautifully with the crisp vegetables.

Olives (Optional)
Olives bring briny, salty depth and extra Mediterranean flavor that enhances the freshness of the salad.

Olive Oil
Olive oil creates the rich base of the dressing and helps coat the vegetables with smooth, balanced flavor.

Red Wine Vinegar
Red wine vinegar adds acidity and brightness, helping the salad taste fresh and lively.

Honey
Honey softens the sharpness of the vinegar and creates balance with a light natural sweetness.

Garlic
Garlic adds savory aroma and bold flavor, giving the dressing extra depth.

For the Salad

For the Dressing

Instructions

  1. To a small jar with a lid, add the olive oil, red wine vinegar, honey, minced garlic, dried oregano, salt, and black pepper. Seal the jar tightly and shake well until the dressing is fully combined and slightly emulsified. You can also add everything to a small bowl and whisk until smooth.
  2. In a large salad bowl, add the diced tomatoes, cucumber, and thinly sliced red onion. If using olives, add them at this stage so they mix evenly throughout the salad.
  3. Pour the dressing over the vegetables and toss gently until everything is evenly coated. The vegetables should look glossy and lightly dressed without becoming too wet.
  4. Top with crumbled feta cheese if using, and serve immediately for the freshest texture. You can also chill the salad for 15 to 20 minutes before serving for an even cooler, more refreshing finish.
  5. Serve as a light side dish with grilled meats, baked fish, roast chicken, or alongside rice dishes and wraps.

Note

Use ripe but firm tomatoes so the salad stays fresh and not overly watery.

If the red onion feels too strong, soak the slices in cold water for 10 minutes before adding to soften the sharpness.

For extra flavor, add fresh parsley, basil, or a little chopped chadon beni for a Caribbean twist.

Feta is best added just before serving so it keeps its texture and does not become too soft.

This salad is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 1 day.

If making ahead, keep the dressing separate and toss just before serving to maintain the best crunch and freshness.
