Oyster Mushroom Quesadillas are a simple way to turn oyster mushrooms into a hearty, savory filling without trying to disguise what they are. The mushrooms are shredded by hand, sautéed with red, green, and yellow bell peppers, then seasoned with a homemade taco blend of chili powder, cumin, smoked paprika, garlic, oregano, and red pepper flakes. The result is a filling that is earthy and savoury with smoky, warm spice and plenty of texture.
Shredding the oyster mushrooms with your fingers rather than chopping them gives the filling a more irregular texture, with some pieces becoming tender while others retain a little bite. They cook quickly, so there's no need to simmer them for a long time. In fact, cooking them for just 5–6 minutes keeps them from becoming overly soft. The peppers and onions also have enough time to soften and release their flavor while retaining some texture.
The homemade taco seasoning brings most of the character to the filling. Cumin gives it an earthy warmth, smoked paprika adds a subtle smokiness, and chili powder provides the peppery backbone. Garlic powder, onion powder, oregano, black pepper, and red pepper flakes round out the blend. A small amount of dark soy sauce can also be added for deeper color and extra savouriness, although it's completely optional.
Once the mushroom filling is ready, the quesadillas are assembled directly in a warm tortilla with freshly shredded cheese. Adding cheese both underneath and over the mushroom filling helps everything hold together once the tortilla is folded. Toasting the quesadilla over low heat gives the tortilla time to become crisp while allowing the cheese to melt without burning the outside too quickly.
Serve the quesadillas hot, cut into wedges, with Creamy Jalapeño Dip for dipping. The cool, creamy sauce works particularly well alongside the warm taco-seasoned mushrooms and melted cheese.
Ingredient Details
Oyster mushrooms: The main filling. Shredding them by hand creates a meaty, irregular texture that works well inside the quesadillas.
Red bell pepper: Adds sweetness, color, and a tender-crisp texture.
Green bell pepper: Brings a slightly more pronounced pepper flavor and balances the sweeter peppers.
Yellow bell pepper: Adds natural sweetness and bright color.
Onion: Provides sweetness and savoury depth as it softens in the pan.
Garlic: Adds aromatic savouriness to the mushroom mixture.
Dark soy sauce: Optional, but useful for adding deeper color and a richer savoury note.
Olive oil: Provides the fat needed to sauté the vegetables and mushrooms while helping the seasonings coat the filling.
Salt: Brings the flavors together and should be adjusted after cooking.
Chili powder: Forms the peppery base of the taco seasoning.
Cumin: Adds earthy warmth and gives the seasoning its familiar taco-style character.
Smoked paprika: Brings gentle smokiness and a subtle sweetness.
Black pepper: Adds a sharper peppery note.
Garlic powder: Gives the seasoning a concentrated savoury garlic flavor.
Onion powder: Adds depth and reinforces the savoury notes.
Oregano: Brings an earthy herbal flavor to the seasoning.
Red pepper flakes: Add small bursts of heat.
Whole wheat tortillas: Hold the filling together and become crisp as they toast.
Mild cheddar or Mexican blend cheese: Melts around the mushroom filling and helps bind the quesadilla together.
Creamy Jalapeño Dip: Provides a cool, creamy, spicy contrast to the hot quesadilla.
Ingredient Alternatives
Oyster mushrooms: King oyster mushrooms can be used, although their firmer texture will give the filling a slightly different bite.
Bell peppers: Use any combination of bell pepper colors available.
Dark soy sauce: This can be omitted without affecting the overall recipe.
Whole wheat tortillas: Regular flour tortillas can be substituted.
Mild cheddar: A Mexican cheese blend, Monterey Jack, or another good melting cheese can be used.
Creamy Jalapeño Dip: Any creamy spicy dipping sauce can be used, although the linked dip is particularly suited to this recipe.
