Jicama, sometimes called yam bean, is a root vegetable with a mild, slightly sweet flavour and a texture that stays firm even after sitting in brine. Julienned into thin matchsticks, it takes on the tang of white vinegar, the warmth of peppercorns and garlic, and just enough chili flakes to leave a gentle hum. The result is a crisp, bright pickle that works as a snack, a topping, or a side to richer dishes.

The brine is straightforward: white vinegar and water in equal parts, with sugar to soften the sharpness and salt to season. Peppercorns and garlic cloves go into the jar with the jicama, infusing the brine as it sits. The chili flakes are optional in spirit but worth including for the small amount of heat they bring. The proportions here are balanced, tangy without being harsh, and sweet enough to round out the vinegar without turning the pickle sugary.

One detail about the method worth noting: the brine is boiled briefly to dissolve the sugar and salt, then cooled completely before it goes over the jicama. Boiling guarantees a smooth, fully dissolved brine with no gritty granules left behind, which matters because jicama is pickled cold and there is no further heat to help the sugar dissolve later. Cooling the brine before pouring is just as important. Hot brine would soften the outer layer of the jicama and dull its snap, so let it come down to room temperature first. It takes a little patience, but it is the difference between a pickle with real crunch and one that goes limp.

Jicama holds up beautifully to pickling because it does not soften the way cucumber or onion does. The julienned pieces stay crisp for weeks in the fridge. The thinner you cut the matchsticks, the faster they absorb the brine, so a mandoline helps if you have one. If not, a sharp knife and a steady hand will do. Cut them roughly the same size so they pickle evenly.

This is a refrigerator pickle, not a shelf-stable one. There is not enough vinegar in the brine to safely water-bath can it, so keep the jar in the fridge and use it within a few weeks. The pickle is ready to eat after about an hour, but the flavour deepens noticeably after a day or two. Serve it alongside grilled meats, tacos, sandwiches, or a cheese board, or eat it straight from the jar when you want something crunchy and sharp.

INGREDIENT DETAILS

Jicama (1/2 lb, peeled and julienned): The base of the pickle. Its mild sweetness and firm, water-chestnut-like crunch hold up in brine without going soft, making it ideal for pickling.

White Vinegar (3/4 cup): The primary preserving agent, sharp and clean, and it lets the peppercorns and garlic come through without competing flavours.

Water (3/4 cup): Dilutes the vinegar so the brine is tangy rather than harsh, and helps the sugar and salt dissolve evenly when boiled.

Peppercorns (4 tsp): Whole black peppercorns infuse the brine with a warm, sharp bite. They also look good in the jar and continue to season the pickle as it sits.

Garlic (2 cloves): Adds a savoury, pungent base note that deepens over time. Leave them whole or halve them so the flavour releases slowly.

Sugar (3 tbsp): Softens the vinegar’s edge and balances the salt, giving the pickle a rounded rather than sharply sour finish. Boiling ensures it dissolves completely before the brine cools.

Salt (3 tsp): Seasons the brine and draws moisture from the jicama, which helps it absorb the vinegar. It also keeps the texture firm. Boiling dissolves it fully so the brine is evenly seasoned.

Chili Flakes (1/2 tsp): A small amount of gentle heat that builds as the pickle sits. Adjust up or down depending on how spicy you want it.

INGREDIENT ALTERNATIVES

Main Recipe Ingredients: Jicama, White Vinegar, Water, Peppercorns, Garlic, Sugar, Salt, Chili Flakes.

Alternatives:

Jicama: Daikon radish or kohlrabi can substitute for a similar crisp texture, though the flavour will differ.

White Vinegar: Rice vinegar for a milder pickle, or apple cider vinegar for a fruitier tang.

Water: No substitute needed.

Peppercorns: Pink or mixed peppercorns for a slightly different aroma.

Garlic: 1/2 tsp garlic powder in place of fresh cloves, though the flavour will be less rounded.

Sugar: Honey or maple syrup can substitute, though the brine may darken slightly.

Salt: No substitute needed.

Chili Flakes: A small amount of finely chopped fresh chili or a pinch of cayenne.

If you enjoyed this recipe, you may also enjoy my recipe for Pickled Roasted Jalapeños

Pickled jicama is a simple refrigerator pickle that makes the most of jicama’s best quality: its crunch.
