Orange Glazed Pork

Crispy air fryer pork cubes tossed in a sticky, sweet-tangy orange glaze with garlic, ginger, and a hint of soy.

Orange Glazed Pork is one of those dishes that looks like more work than it is. The pork gets a simple seasoning, a cornstarch coating, and a short trip through the air fryer, which gives it a crisp outside without deep frying. While it cooks, the glaze comes together in one pan, and by the time the pork is done, everything is ready to combine.

The glaze is where the flavour lives. Orange juice and zest bring brightness, brown sugar adds depth and stickiness, and garlic, ginger, dark soy sauce, and apple cider vinegar round it out with savoury, tangy notes. Cornstarch thickens it into a glossy sauce that clings to every piece of pork instead of pooling at the bottom of the plate.

Coating the pork in cornstarch before air frying is what gives it that light crust. It also helps the glaze grip the meat rather than sliding off. The pork stays tender inside while the edges crisp up, and the sweet-tangy glaze balances the richness of the meat.

This dish works well for a weeknight dinner because the active time is short. Once the pork is in the air fryer, you have just enough time to build the glaze. Serve it over rice with steamed veggies, and finish with green onions, sesame seeds, and chili flakes for colour and a little heat.

Orange Glazed Pork is easy to adjust. Add more chili flakes if you want heat, or a little more vinegar if you prefer a sharper glaze. The recipe scales up easily if you are cooking for more than two.

INGREDIENT DETAILS

Pork (2 lbs, cut into cubes): Pork shoulder or pork butt works best here because it stays tender and juicy when air fried. Cut the cubes roughly the same size so they cook evenly.

Cornstarch (4 tbsp, for coating): Cornstarch gives the pork a light, crisp coating as it air fries and helps the glaze cling to the meat.

Garlic powder (3/4 tsp): Garlic powder seasons the pork evenly and adds a savoury base note that pairs well with the orange glaze.

Ginger powder (3/4 tsp): Ground ginger brings warmth and a gentle spice to the pork coating, echoing the fresh ginger in the glaze.

Chili powder (1/2 tsp): Chili powder adds mild heat and a slightly smoky note to balance the sweetness of the glaze.

Black pepper (1/2 tsp): Black pepper adds a warm bite and rounds out the seasoning on the pork.

Salt (1 tsp for the pork, plus salt to taste for the glaze): Salt seasons the pork throughout and balances the sweetness of the orange glaze.

Orange juice (1/2 cup): Freshly squeezed orange juice gives the glaze its bright, citrus base. It also helps dissolve the sugar and carries the other flavours.

Water (3/4 cup, for the glaze): Water stretches the glaze and gives it time to reduce and thicken on the stove. It keeps the sauce light rather than syrupy.

Brown sugar (1/2 cup): Brown sugar sweetens the glaze and gives it a deep, caramel-like colour and a sticky finish.

Garlic (2 cloves, minced): Fresh minced garlic adds a sharper, more aromatic note to the glaze than garlic powder can.

Orange zest (1/2 tbsp): Zest adds concentrated citrus oil that brightens the glaze and reinforces the orange flavour.

Cornstarch (2 tsp, for the glaze): Cornstarch thickens the glaze so it coats the pork instead of running off.

Water (1 tbsp, for the slurry): Water dissolves the cornstarch into a smooth slurry so it thickens the glaze without lumps.

Ginger (1 tsp, grated): Fresh grated ginger adds a bright, slightly spicy warmth that lifts the glaze.

Dark soy sauce (1 tsp): Dark soy sauce adds depth, colour, and a mild savoury note that keeps the glaze from tasting one-dimensional.

Apple cider vinegar (1 tsp): Apple cider vinegar cuts through the sweetness and adds a light tang that balances the sugar and orange.

Green onions (for garnish): Sliced green onions add a fresh, mild onion bite and a pop of colour on top.

Chili flakes (for garnish, optional): Chili flakes add a little heat and texture for anyone who wants extra spice.

Sesame seeds (for garnish, optional): Sesame seeds add a light nutty flavour and a subtle crunch as a finishing touch.

Instructions

  1. Season the pork cubes with garlic powder, ginger powder, chili powder, salt, and black pepper, and toss well.
  2. Coat the seasoned pork with the cornstarch until evenly covered.
  3. Place the pork on parchment paper or baking paper and spray lightly with oil.
  4. Air fry at 425°F for 10 to 12 minutes, tossing halfway through, until the pork is cooked through and lightly crisp at the edges.
  5. While the pork is air frying, add the orange juice, 3/4 cup water, sugar, garlic, orange zest, ginger, soy sauce, and apple cider vinegar to a medium-sized skillet or saucepan over low to medium heat.
  6. Whisk gradually until the sugar melts.
  7. Mix the cornstarch into 1 tbsp of water and stir until fully dissolved.
  8. Stir the slurry into the orange glaze mixture and stir gradually until it begins to simmer.
  9. Let it simmer on low heat for 8 to 12 minutes, stirring occasionally, until the glaze reduces and thickens enough to coat the back of a spoon. With 3/4 cup water, this will take longer than a few minutes.
  10. Turn the heat off once the glaze reaches the thickness you want.
  11. Add the air fried pork to the glaze, coating well.
  12. Serve hot with rice and steamed veggies, garnished with green onions or chives, sesame seeds, and chili flakes.

Note

Cut the pork into even cubes so they cook at the same rate. Uneven pieces will dry out before the rest are done.

Do not overcrowd the air fryer basket. Cook in batches if needed so the pork crisps instead of steaming.

Whisk the slurry again right before adding it, since cornstarch settles quickly.

The glaze thickens as it cools, so turn the heat off a little before it reaches your ideal thickness.

If the glaze becomes too thick, loosen it with a splash of orange juice or water.

Leftovers keep in the fridge for up to 3 days. Reheat gently in a skillet or air fryer to keep the coating from going soft.

For more heat, add extra chili flakes to the glaze rather than the pork coating.
