Simple Cabbage Stir-Fry

Servings: 4 Total Time: 27 mins Difficulty: Beginner
Tender-crisp cabbage, carrots, and onions quickly stir-fried with garlic and sesame oil for a light, flavorful side.

Cabbage is one of those vegetables that changes completely once it hits a hot pan. It softens just enough to become tender while still holding onto a slight crunch, creating a texture that’s far more interesting than either raw or overcooked cabbage.

The key to this recipe is keeping things simple. Instead of relying on heavy sauces, garlic, sesame oil, and a little chili provide just enough seasoning to complement the natural sweetness of the cabbage, carrots, and onions.

Cooking everything over high heat also helps preserve the vegetables’ vibrant colour and fresh flavor. The cabbage wilts, the carrots stay slightly crisp, and the onions become sweet and fragrant without losing their texture.

It’s the kind of side dish that works alongside almost anything, proving that a handful of everyday ingredients can come together into something surprisingly satisfying.

INGREDIENT DETAILS

Green Cabbage
The foundation of the dish. Green cabbage softens as it cooks while maintaining a pleasant bite and a naturally sweet flavor.

Carrot
Adds colour, sweetness, and a slight crunch that contrasts with the cabbage.

Onion
Softens during cooking, adding sweetness and depth to the stir-fry.

Garlic
Provides a fragrant, savory base that flavors the vegetables.

Pimentos (Optional)
Add mild sweetness, colour, and a subtle pepper flavor.

Sesame Oil
Contributes a rich, toasted aroma that complements the vegetables.

Olive Oil
Provides the primary cooking fat and helps the vegetables cook evenly.

Chili Flakes
Add a gentle warmth without overpowering the dish.

Salt
Enhances the natural sweetness of the vegetables.

Black Pepper
Adds mild spice and rounds out the seasoning.

INGREDIENT ALTERNATIVES

Description

This simple cabbage stir-fry transforms everyday vegetables into a colorful, satisfying dish with very little effort. Garlic, sesame oil, and a touch of chili flakes bring just enough flavor to let the fresh vegetables remain the focus.

Ingredients

Instructions

  1. Heat the olive oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the sliced onion and cook for 2–3 minutes, stirring frequently until it begins to soften.
  2. Add the garlic and cook for about 30 seconds, just until fragrant. Stir in the pimentos, if using, followed by the julienned carrots. Cook for another 2–3 minutes, allowing the carrots to soften slightly while still retaining a little bite.
  3. Add the sliced cabbage in batches if necessary, tossing frequently as it begins to wilt. Season with the chili flakes, salt, and black pepper. Continue stir-frying for 4–5 minutes, stirring often, until the cabbage is tender-crisp and still vibrant in colour.
  4. Drizzle the sesame oil over the vegetables during the final minute of cooking and toss well to coat everything evenly. Taste and adjust the seasoning if needed before serving.

Note

Slice the cabbage as evenly as possible so it cooks at the same rate.

Avoid overcrowding the pan, as this can cause the vegetables to steam instead of stir-fry.

For extra protein, add cooked chicken, shrimp, tofu, or scrambled eggs.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat quickly in a hot skillet to help maintain the vegetables' texture.
