Homemade Teriyaki Sauce

Total Time: 25 mins Difficulty: Beginner
A glossy, sweet and savory sauce made from pantry staples that clings beautifully to meat, seafood, vegetables, and noodles.

A good teriyaki sauce should strike the right balance between sweet and savory, with enough body to coat food without becoming overly thick. Fresh garlic and ginger add depth, while sesame oil brings a subtle toasted aroma that rounds everything out.

One of the best things about making it yourself is how easy it is to adjust. You can make it slightly sweeter, add a little more ginger for extra warmth, or thin it out if you’re using it as a marinade.

This recipe uses everyday ingredients and comes together in a single saucepan. As it simmers, the brown sugar melts into the soy sauce, creating a rich glaze that thickens just enough to brush over grilled meats, toss with stir-fried vegetables, or coat noodles.
Once you’ve made it from scratch, it’s the kind of recipe you’ll find yourself keeping on hand whenever you want to add bold, balanced flavor to a meal.

INGREDIENT DETAILS

Light Soy Sauce –
Forms the savory base of the sauce, providing its signature salty, umami flavor.

Mirin –
Adds gentle sweetness and a mild tang that gives teriyaki its characteristic taste. If unavailable, white vinegar and sugar create a similar balance.

Sesame Oil –
Contributes a rich, nutty aroma that enhances the finished sauce.

Brown Sugar –
Sweetens the sauce while adding a light caramel flavor and helping create its glossy finish.

Garlic –
Fresh minced garlic adds depth and a savory backbone.

Fresh Ginger –
Brings a bright, slightly spicy freshness that balances the sweetness.

Cornstarch –
Thickens the sauce into a smooth glaze.

Water –
Combined with the cornstarch to create a slurry, ensuring the sauce thickens without lumps.

INGREDIENT ALTERNATIVES

Mirin:
Replace with 2 tbsp white vinegar mixed with 1 tbsp white sugar.

Light Soy Sauce:
Use reduced-sodium soy sauce for a less salty version.

Brown Sugar:
Dark brown sugar will give a deeper molasses flavor.

Fresh Ginger:
½ tsp ground ginger can be used if fresh isn’t available, though the flavor will be less vibrant.

Sesame Oil:
No substitute needed.

Description

Making teriyaki sauce from scratch gives you complete control over the balance of sweetness, saltiness, and richness. This simple recipe comes together i minutes and creates a smooth, versatile sauce that's far more flavorful than many bottled versions.

Ingredients

Instructions

  1. Combine the soy sauce, brown sugar, sesame oil, mirin, garlic, and ginger in a medium saucepan. Stir well and place over medium heat. Bring the mixture to a gentle simmer, stirring occasionally, until the brown sugar has completely dissolved and the garlic and ginger become fragrant, about 6–8 minutes.
  2. In a small bowl, whisk together the cornstarch and water until smooth. Slowly pour the slurry into the simmering sauce while whisking continuously. Reduce the heat to low and cook for another 3–5 minutes, stirring constantly, until the sauce thickens enough to lightly coat the back of a spoon and develops a glossy finish.
  3. Remove from the heat and allow the sauce to cool slightly. It will continue to thicken as it cools. Use immediately or transfer to a clean jar once completely cooled.

Note

Store in an airtight jar or container in the refrigerator for up to 2 weeks.

The sauce will thicken further as it chills. If needed, stir in a small splash of water while reheating to loosen the consistency.

Use as a glaze during the final minutes of cooking to prevent the sugars from burning.

For a smoother sauce, strain out the garlic and ginger before storing.
