It’s budget-friendly, nourishing, and perfect for anyone looking for a satisfying plant-based meal that still delivers big flavor and texture.
INGREDIENT DETAILS
Cooked Lentils (1 box prepared lentils)
Lentils create the hearty base of the gyro filling, providing plant-based protein and a rich, earthy flavor that holds up well to spices and baking.
Ground Flaxseed (2 tbsp)
Ground flax acts as a natural binder when mixed with liquid, helping the lentil mixture hold together as it bakes.
All-Purpose Flour (4 tbsp)
Flour helps firm up the mixture and creates structure so the filling can be rolled, baked, and sliced without falling apart.
Oil (1 tbsp)
Oil adds moisture and helps the filling bake evenly while preventing the texture from becoming too dry.
Hot Water (2 tbsp)
Hot water activates the flax and hydrates the mixture, helping everything bind into a smooth paste.
Onion, grated (1 small)
Grated onion adds moisture, natural sweetness, and aromatic flavor throughout the lentil mixture.
Garlic, grated (2 cloves)
Garlic provides savory depth and warmth that enhances the spice blend and overall flavor.
Gyro Spice Mix (to taste)
A blend of warm spices gives the lentil filling its signature gyro-inspired flavor, adding complexity and savory character.
Whole Wheat Pita Wraps (3–4)
Soft whole wheat pita provides a warm, sturdy wrap that holds the filling and fresh toppings beautifully.
Swiss Mambo Sauce
Adds sweet heat and tangy Caribbean flavor that brightens the wrap.
Swiss Garlic Sauce
Provides creamy, garlicky richness that complements the lentil filling.
Mayonnaise
Adds extra creaminess and balances the spices with a smooth, mild flavor.
Lettuce
Fresh lettuce brings crispness and freshness that contrasts with the warm lentil filling.
Thinly Sliced Cucumbers
Cucumbers add cool crunch and a refreshing bite to the wrap.
Diced Tomatoes
Tomatoes provide juiciness and mild acidity that brightens the overall flavor.
Diced Pineapple
Pineapple introduces a burst of sweetness that balances the savory spices and creamy sauces.

Instructions
-
Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
-
Add the cooked lentils, ground flaxseed, flour, oil, grated onion, grated garlic, and the spice mix to a food processor. Pulse the mixture until it forms a thick, cohesive paste. Transfer the mixture to a bowl, add the hot water and salt, and stir well until the filling becomes smooth and slightly sticky. The hot water helps activate the flax and binds the mixture together.
-
Lay two sheets of parchment paper on your work surface. Divide the lentil mixture evenly onto the sheets. Place another sheet of parchment on top of each portion and gently roll the filling into flat rectangles. Roll carefully so the mixture spreads evenly while staying intact without cracking.
-
Remove the top layer of parchment and carefully roll each sheet containing the lentil filling into a wide log using the bottom parchment as support. Place the rolled portions onto the prepared baking tray.
-
Bake for 25–30 minutes until the lentil gyro rolls become firm and lightly set on the outside. Remove from the oven and allow them to cool for about 10–12 minutes. This resting time helps the filling firm up and makes it easier to handle.
-
Once cooled slightly, remove the parchment and tear the baked lentil gyro into smaller pieces. Warm the pita wraps if desired, then fill each with the lentil pieces, lettuce, cucumbers, tomatoes, and pineapple. Drizzle with Swiss Mambo sauce, garlic sauce, and mayo before serving.
Note
For the best texture, make sure the lentil mixture is blended well so it forms a smooth paste before baking.
If the mixture feels too dry, add a small splash of water; if it feels too wet, add a tablespoon of flour.
The baked lentil filling stores well in the refrigerator for up to four days and reheats easily in a skillet or oven.
You can also freeze the baked rolls before slicing for up to two months.
Adjust the spice mix to suit your taste. Add chili flakes or pepper sauce for extra heat, or smoked paprika for a deeper flavor.
The filling also works well served in bowls with rice, salads, or roasted vegetables if you want to skip the pita.
