Jerk Chicken Lasagna

Servings: 8 Total Time: 1 hr 15 mins Difficulty: Intermediate
A bold Caribbean twist on a classic comfort dish, layers of spicy jerk chicken, creamy cheese sauce, and tender noodles baked to perfection.

Jerk Chicken Lasagna brings together two worlds of comfort food , the fiery, aromatic spices of Jamaican jerk and the creamy indulgence of Italian-style lasagna. This dish was born out of a special request from my husband, who asked me to make a lasagna that reminded him of Rasta Pasta, but baked lovingly into his all-time favorite food, you guessed it, lasagna. The result is a mouthwatering fusion that’s every bit as bold, cheesy, and satisfying as he imagined.

Every bite offers a delicious contrast, smoky, seasoned jerk chicken tucked between tender pasta sheets, smothered in a rich, velvety cheese sauce that perfectly balances the heat. It’s the kind of meal that feels both familiar and exciting, comforting enough for a cozy weeknight dinner, yet impressive enough to take center stage at a family gathering.

What truly makes this dish shine is its depth of flavor. The jerk marinade infuses the chicken with the warmth of Scotch bonnet, thyme, and allspice, while the creamy cheese sauce mellows and rounds out the spice with buttery smoothness. Together, they create a perfect Caribbean-Italian fusion, spicy, savory, and irresistibly cheesy.

This Jerk Chicken Lasagna is made for anyone who loves a hearty, flavor-packed bake. It’s freezer-friendly, great for meal prep, and pairs beautifully with garlic bread or a crisp green salad. Whether it’s served for Sunday lunch, a holiday dinner, or just a midweek craving for comfort, this dish delivers big flavor in every single layer.

INGREDIENT DETAILS

Chicken Breast (small to medium, deboned, cubed)
The base protein of the dish — lean, tender, and perfect for absorbing the jerk marinade’s bold spices.

Jerk Marinade
Adds the signature Caribbean heat and smoky-sweet flavor. Adjust the amount to suit your spice tolerance.

Bell Peppers (red, green, yellow)
Provide color, sweetness, and a slight crunch that balances the creamy layers.

Onion
Adds sweetness and depth to the filling as it caramelizes slightly during cooking.

Garlic
Boosts the savory aroma and rounds out the jerk flavors beautifully.

Smoked Paprika
Enhances the smokiness of the jerk seasoning and deepens the sauce’s color.

Parsley & Thyme
Fresh herbs that add brightness and earthiness to the spicy filling.

Garlic Powder & Onion Powder
Enhance flavor and tie the sauce and filling together seamlessly.

Cayenne Pepper & Red Pepper Flakes (optional)
For extra heat lovers — a great way to intensify the jerk flavor.

Olive Oil
Used for sautéing; brings out the flavors of the vegetables and herbs.

Parmesan & Mozzarella (for sauce and layering)
Create that signature stretchy, creamy texture and rich umami flavor.

Milk or Light Cream
Forms the base of the cheese sauce — smooth, rich, and perfectly coats the noodles.

Pasta Water
Helps loosen and bind the sauce, ensuring a silky consistency.

Butter & Flour
Used to create a roux — the foundation of a thick, creamy sauce.

Black Pepper & Salt
Balance and enhance all the rich, spicy flavors.

Lasagna Noodles
Provide structure and layers for soaking up the creamy jerk chicken mixture.

Garlic Bread & Fresh Parsley (for serving)
Perfect finishing touches — buttery bread to mop up the sauce and fresh herbs for color and freshness.

Instructions

  1. Bring a large pot of salted water to a boil and cook lasagna noodles according to package directions until al dente. Reserve one cup of pasta water before draining, rinse noodles with cold water, and set aside.
  2. In a medium saucepan, melt the butter over low heat. Add the flour and whisk until smooth and combined, forming a roux. Gradually whisk in milk, stirring continuously until thickened and lump-free. Add the pasta water, black pepper, and jerk marinade, whisking to combine. Once the mixture begins to simmer, turn off the heat and slowly fold in the cheese until smooth. Season lightly with salt and set aside.

  3. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers and sauté for 2–3 minutes until fragrant. Stir in the chicken, garlic, and remaining spices. Cook for 6–8 minutes until the chicken is fully cooked. Add about 1½ cups of the prepared cheese sauce to the filling and let simmer for another 6–8 minutes, reducing excess liquid. Remove from heat.
  4. Preheat oven to 325°F (160°C). Grease a baking dish with butter or oil. Spread a thin layer of cheese sauce on the bottom, followed by noodles, a layer of jerk chicken filling, and a sprinkle of cheese. Repeat until all layers are assembled. For the final layer, top with cheese sauce and a generous mix of Parmesan and mozzarella.
  5. Bake for 35–40 minutes until the top is golden brown and bubbly. For extra color, finish under the broiler for 5–10 minutes. Remove from the oven and let rest for 15–20 minutes before slicing. Serve with a spoonful of remaining cheese sauce on plate, add lasagna, garlic bread, and a sprinkle of fresh parsley.

Note

Heat Control: Use less jerk marinade or skip cayenne if you prefer milder spice.

Cheese Sauce Tip: Add the cheese off heat to avoid curdling.

Meal Prep: Assemble ahead, refrigerate, and bake when ready.

Freezer Friendly: Wrap unbaked lasagna tightly and freeze for up to 2 months.

Serving Idea: Pairs beautifully with garlic bread or a crisp green salad.
