Bacon Jam is the ultimate sweet-and-savory condiment you didn’t know you needed. This irresistible spread transforms humble ingredients like bacon, onions, and garlic into a sticky, caramelized jam with smoky depth, gentle heat, and just the right balance of sweet and tangy. It’s perfect spooned over crusty bread, slathered onto burgers, or paired with cheese for a gourmet appetizer.
While bacon jam has become trendy in gourmet cafés and charcuterie boards, it has deep roots in Southern-style cooking where slow-cooked pork and sweet-sour seasonings shine. This version brings in a hint of Caribbean influence with thyme and pepper flakes, giving it a subtle herbaceous note alongside the smoky richness.
What makes this bacon jam truly special is its versatility. It’s a small-batch recipe that can be made ahead, stored in the fridge for weeks, and used to instantly elevate breakfast sandwiches, brunch spreads, or even holiday dinner menus. The combination of crispy-meets-jammy texture and layers of smoky, sweet, tangy, and spicy flavors makes it a guaranteed crowd-pleaser.

BACON JAM
Description
A luscious spread made from slow-cooked bacon, onions, garlic, sugar, and spices, perfect for sandwiches, burgers, cheese boards, or holiday gifting.
Ingredients
Instructions
-
Start by mincing bacon with knife or pulsing in the food processor, add the minced bacon to a cold skillet or saucepan. Turn the heat to medium or medium-high and slowly cook the bacon, stirring frequently for 7–10 minutes, until the fat renders and the pieces are beginning to brown but are still slightly pink. Remove the bacon and set aside.
-
Melt the butter in the same pan, then add the onion, garlic, thyme, cayenne, and red pepper flakes. Sauté for 2–3 minutes until the onions are soft and translucent.
-
Deglaze the pan by adding apple cider vinegar, water, and brown sugar. Stir well while scraping the bottom of the pan to release any browned bits. Simmer for about 15 minutes until the liquid thickens slightly.
-
Return the bacon to the pan along with balsamic vinegar. Stir to combine and continue cooking for 10 minutes, stirring occasionally, until the liquid has reduced and the mixture has a sticky, jam-like consistency.
-
Remove from heat and allow the bacon jam to cool slightly before transferring to a clean airtight container. Refrigerate for up to 1 month.
Note
For best flavor, use thick-cut smoked bacon.
The jam thickens as it cools, so don’t over-reduce on the stove.
Adjust spice by adding more cayenne or red pepper flakes to taste.
Serve warm or at room temperature for easy spreading.
This makes a fantastic edible gift, spoon into jars and add labels.
Store in the fridge and reheat gently before using on burgers or toast or pizza.
