Instructions

  1. Start by combining all the spices (thyme, garlic powder, onion powder, cayenne, black pepper, turmeric, smoked paprika, roasted geera) in a small bowl, reserving the salt separately.
  2. Season the chicken breast cutlets with salt and half of the spice blend, ensuring they are evenly coated on both sides.
  3. In a medium-large skillet over high heat, add 3 tablespoons of grapeseed oil. Once hot, place the seasoned chicken cutlets in the skillet. Cook for about 5 minutes on each side, or until golden and cooked through. Remove the cutlets and set them aside. Reserve any pan drippings.
  4. Add the remaining 1 tablespoon of grapeseed oil to the same skillet. Toss in the diced onions, carrots, and bell peppers. Sauté for about 30–60 seconds, then add the minced garlic and cook for another 30 seconds.
  5. Stir in the washed rice and the remaining half of the spice mixture. Mix well to coat the rice in the oil and spices.
  6. Add 5 cups of water and bring to a simmer. Cover the skillet, reduce heat to medium-low, and cook for 20–25 minutes. Check the rice at the 20-minute mark—if still firm, add 3/4 cup water and slightly raise the heat for the remaining 5 minutes.
  7. Once the rice is cooked through, turn off the heat. Add salt to taste and fluff the rice with a fork.
  8. Place the cooked chicken cutlets on top of the rice. Pour over any reserved pan juices. Cover the skillet and let it sit for 7–10 minutes to allow the flavors to meld.
  9. Slice the chicken breasts and serve them over the rice. Drizzle with garlic sauce, add avocado slices or salad, and garnish with parsley.

Note

Letting the rice rest with the chicken on top after cooking helps the flavors soak in and keeps the chicken tender.

You can prep the spice blend in advance and store in a jar for quicker weeknight use.

For even more flavor, replace 1 cup of the water with low-sodium chicken broth.

To make it spicier, double the cayenne or add chopped fresh chili to the veggie mix.

Always taste your rice before final seasoning—salt levels can vary based on your toppings and broth if used.
