Ingredients
Instructions
-
Place the cubed shark in a large mixing bowl. Add the green seasoning and salt, mixing until it is well-coated. Cover or seal the bowl and let it marinate for 15-20 minutes.
-
In another medium-large mixing bowl, add the flour and all the spices and seasonings. Mix thoroughly to ensure even distribution.
-
Preheat the oil for frying to 350°F. Use a thermometer to check the temperature for accuracy.
-
Once the flour is seasoned, scoop 1/2 cup of the seasoned flour into the bowl with the marinated pieces. Add the water and mix until a thick, smooth batter forms.
-
Dip each marinated handfuls of shark into the remaining seasoned flour, shaking off any excess. Let it rest for 5-7 minutes before placing them in the hot oil to fry in batches. Fry for 5-6 minutes or until the pieces are golden brown and begin rising to the surfac. Be careful not to overcrowd the pan, as this can lower the oil temperature.
-
Once all the pieces are fried, place them on a wire rack or paper towels to drain off excess oil.
-
In a medium-sized frying pan or saucepan, combine the tamarind sauce, water, brown sugar, red pepper flakes, and minced garlic (if using). Stir gradually to dissolve the sugar and bring the mixture to a low simmer.
-
Add the fried chicken tenders to the saucepan and toss to coat them evenly in the sauce.
-
Remove from heat and put your salad together while you let you shark bites cool slightly. to your bowl add a bed of lettuce and top with cucubers, tomatoes, red and green cabbage, pickled onions and shark, you then drizzle your garlic sauce over your salad and a few drops of pepper sauce over your shark and you can then enjoy.
Note
- Marination: Allow the shark to marinate for at least 15-20 minutes to enhance its flavor. If you have more time, marinating longer (up to a few hours) can deepen the taste.
- Oil Temperature: Ensure the oil is preheated to around 350°F (175°C) before frying. Use a thermometer for accuracy; this helps achieve a crispy texture without absorbing too much oil.
- Batter Consistency: Adjust the water in the batter to achieve your desired thickness. A thicker batter will yield a crunchier coating.
- Frying in Batches: Avoid overcrowding the pan when frying the shark bites. Fry in small batches to maintain the oil temperature and ensure even cooking.
- Serving Suggestion: For added flavor, serve with additional sauces on the side, such as garlic sauce or pineapple pepper sauce.
- Storage: Leftover shark bites can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer to maintain crispiness.
