Additional Items

Cranberry & Almond Cream Cheese LOg

  1. Add the almonds and cranberries to a food processor and rough chop. Place onto a parchment-lined plate and mix in 1 tbsp of chopped parsley.
  2. In a small mixing bowl, add the softened cream cheese, minced garlic, onion powder, garlic powder, black pepper, and salt. Mix well. Place cling wrap on a plate or cutting board, and wrap the mixture while gradually using the cling film to form a log shape.
  3. Chill in the fridge for 15-20 minutes. Once chilled, remove from the fridge and roll the cream cheese log over the cranberry and almond mixture, coating it well.
  4. Sprinkle some of the remaining mixture onto your serving platter, place the cheese log in the center, and add the fruits and crackers around it. Refrigerate until ready to serve.

Cookies & Cream (Cream Cheese Dessert)

  1. - 4 oz Cream Cheese, softened
  2. - 1 roll Oreos (180g)
  3. - 3 tbsp Condensed Milk
  4. - Mint for garnish (optional)

Creamy Chicken Parmesan Stuffed Pasta Shells

  1. Generously salt a pot of boiling water and add the pasta shells. Cook according to package specifications, then drain and rinse with cold or room temperature water. Set aside.
  2. Preheat the oven to 375°F (190°C).
  3. In a saucepan over medium-high heat, melt 2 tbsp of butter. Add the onions and peppers, sautéing for 1-2 minutes before adding the cubed chicken. Stir in the Cajun seasoning, onion powder, garlic powder, black pepper, and salt. Cook for 12-15 minutes until the chicken is fully cooked.
  4. In another saucepan over medium heat, melt 2 tbsp of butter. Stir in the evaporated milk, seasoning with salt, black pepper, and garlic powder. Gradually add the shredded Parmesan, lowering the heat to low and stirring until melted. Allow the sauce to simmer for 5-7 minutes, until slightly thickened.
  5. Pour 1/2 cup of the cheese sauce over the cooked chicken and mix well. Coat the base of your baking dish with half of the remaining sauce. Begin stuffing the pasta shells with the chicken mixture and place them in the baking dish.
  6. Once all the chicken filling is used, drizzle the remaining sauce over the stuffed shells and top with 1 cup of shredded Parmesan.
  7. Bake in the oven for 15 minutes on regular setting and then for 5 minutes on broil (you can toast garlic bread during the broil). Broil until the cheese is melted and slightly golden.
  8. Serve hot alongside toasted garlic bread and chopped lettuce

Note

Appetizer: Cream Cheese Log with Almonds and Cranberries

  • Soften Cream Cheese: Ensure the cream cheese is at room temperature for easier mixing. If you forget to take it out in advance, you can microwave it in 10-second intervals until softened.
  • Chop Nuts and Fruits: For a more uniform texture, chop the almonds and cranberries into smaller pieces. This will help them stick better to the cream cheese log.
  • Herb Variations: Feel free to experiment with other herbs like chives or dill for a different flavor profile.
  • Presentation: Use a colorful platter to serve the cheese log, and garnish with additional herbs or edible flowers for an elegant touch.

Dessert: Cookies & Cream (Cream Cheese Dessert)

  • Cream Cheese Mixing: Ensure the cream cheese is fully softened to avoid lumps. Mixing with a fork or a hand mixer can help achieve a smooth texture.
  • Layering Technique: When layering the dessert, press down gently on each layer to ensure they hold together well and create a nice visual effect.
  • Chill Time: Allow the dessert to chill for at least 30 minutes to 1 hour for the flavors to meld and to achieve the best texture.
  • Garnish: Crush some additional Oreos for garnish just before serving to maintain their crunchiness.

Main Course: Creamy Chicken Parmesan Stuffed Pasta Shells

  • Pasta Cooking: Cook the pasta shells al dente, as they will continue to cook in the oven. This prevents them from becoming mushy.
  • Chicken Cooking: Ensure the chicken is cooked thoroughly by checking that it reaches an internal temperature of 165°F (75°C).
  • Cheese Sauce Consistency: If the cheese sauce is too thick, you can add a bit more evaporated milk to reach your desired consistency.
  • Baking Tips: Cover the baking dish with foil for the first part of cooking to prevent the cheese from browning too quickly. Remove the foil for the last 5-10 minutes to allow the cheese to become golden and bubbly.
  • Serving Suggestion: For added flavor, sprinkle fresh herbs like basil or parsley on top of the stuffed shells just before serving.

General Cooking Tips:

  • Mise en Place: Prepare all your ingredients beforehand (chop, measure, and set aside). This will streamline your cooking process and reduce stress.
  • Taste as You Go: Don’t forget to taste your dishes as you prepare them, adjusting seasonings as necessary.
  • Clean as You Go: Keep your workspace tidy by cleaning up as you cook, which will make for a smoother cooking experience.
  • Timing: Keep an eye on the clock to ensure that everything is ready to serve at the same time. Use timers for different components if necessary.
