Ingredients

Instructions

  1. 1. Peel the plantains and massage them well with 4 tbsp of Olive Oil. Place the plantains in the air fryer and cook at 200°C for 10 minutes on each side, or until they have browned somewhat.
  2. 2. While the plantains are roasting, in a saucepan or frying pan, add 2 tbsp of Olive Oil. Allow the oil to heat up, then add garlic, onions, 3/4 of the diced sweet peppers, carrots, and mix well. Cook for 5-7 minutes.
  3. 3. Add minced mushrooms and soy sauce, stir well, and cook for an additional 5 minutes. Then, add tomato paste, smoked paprika, parsley, oregano, chili flakes, black pepper, and salt. Mix well and allow to cool for another 8-10 minutes before removing from heat.
  4. 4. Once the plantains are done, remove them from the air fryer and allow them to cool slightly. Meanwhile, prepare the cheese sauce. In a small saucepan, add the plant-based milk and vegan cheese. Mix until the cheese is melted and the sauce has thickened, then remove from heat.
  5. 5. Lay the plantains flat on one side, use a knife to slice down the middle of the upwards facing side. Using a fork or spoon, gradually pry open either side. Continue widening the opening by pressing into the space.
  6. 6. Once you have a wide enough space, spoon the filling into the plantains and top with cheese sauce, diced peppers, and tomatoes. Serve and enjoy!
